Our Long Island waters have experienced an ebb and flow throughout history in oyster farming conditions. In recent years, the tide has taken a turn toward deliciousness. One oyster farm near us in the Great South Bay is Sexton Island Oysters. New Wave Seafood had some of the lovely Sexton Island True Blues.
We snatched up a few dozen and shucked away. We enjoyed them as always — squeeze of lemon, sometimes a little cocktail sauce. It’s not necessary to improve on perfection.
It’s times like these we are proud to be Long (Fork) Islanders.
